Bacon Wrapped Pork Tenderloin

INGREDIENTS:

INSTRUCTIONS:

  1. Set recteq to 375°F. 

  2. Unpack and trim the pork tenderloins as desired.

  3. Rub the tenderloin(s) with Rossarooski's Honey Rib Rub.

  4. Cut your bacon so the slices wrap around the tenderloin with just a little overlap; you want the bacon to render.

  5. Use toothpicks to hold the bacon wraps in place. 

  6. Place on your recteq and cook until the internal temp. is 145°F; 160°F is well done.

  7. Pull the meat off, tent with foil, and let it rest for 15-30 minutes.

  8. Slice about 1/2" thick.
