HABANERO PINEAPPLE GLAZED PORK LOIN

Habanero Pineapple Glazed Pork Loin

INGREDIENTS:

 

Injection:

  • 1/2 cup apple juice 

  • 1/4 cup apple cider vinegar 

  • 1 tbsp of black pepper

INSTRUCTIONS:

  1. Trim excess fat from pork loin.

  2. Mix apple juice, apple cider vinegar, and pepper.

  3. Inject the loin in different areas.

  4. Rub entire loin with mustard.

  5. Generously spread the Rossarooski's Honey Rib Rub and Casanova's Competition Rub over entire loin.

  6. Wrap entire loin with Applewood smoked bacon.

  7. Place on recteq at 225°F for 2 hours.

  8. After 2 hours, carefully remove bacon.

  9. Apply the habanero pineapple glaze with a mop or brush.

  10. Place back on grill until internal temperature is 155°F.

  11. Slice loin to preferred thickness.
