PULLED PORK

Pulled Pork

INGREDIENTS:

  •  8-9lb. pork shoulder

  • Yellow mustard

  • 1 tbsp molasses

 

Rub:

  • 1/2 cup kosher salt

  • 1/2 cup paprika

  • 1/2 cup chili powder

  • 1/2 cup brown sugar

  • 2 tsp celery seed

  • 4 tsp black pepper

  • 2 tsp ancho chili pepper

  • 4 tsp ground mustard

  • 2 tsp cumin

  • 3 tbsp garlic powder

  • 3 tbsp onion powder

 

Mop:

  • 2 cups vegetable oil

  • 2 cups apple cider vinegar

  • 4 cups of apple juice

  • 2 tbsp Worcestershire sauce

  • 2 tbsp soy sauce

 

Carolina Style BBQ Sauce:

  • 1 cup apple cider vinegar

  • 2 tbsp blackstrap molasses

  • 1 tbsp ground mustard

  • 1/2 cup butter

  • 1/2 tsp cayenne pepper

INSTRUCTIONS:

  1. Cover the pork shoulder with mustard and molasses mixture.

  2. Mix ingredients for rub.

  3. Cover shoulder generously with rub.

  4. Heat recteq to 225ºF and place on grill.

  5. Brush with mop every hour..

  6. Cook until internal temperature reaches 195-200ºF (meat should pull apart).

  7. Mix ingredients for Carolina BBQ sauce and serve alongside pulled pork.
